Ingredients

Fennel seeds: 1/2 tsp

Chilli flakes: 1/2 tsp

Black pepper: 1/2 tsp

Light oil for frying

Minced pork: 200g

Garlic: 2 cloves, thinly sliced

Mirin: 1 tsp

White miso: 1 tbsp

Noodles: 200g

Chicken broth: 400g

Pak choi: 2 leaves, roughly chopped

Spring onions: 2, finely sliced

A simple, tasty and quick to prepare noodle soup with a satisfying umami hit

Serves 2

Lightly fry the fennel seeds, chilli and black pepper in a light oil on a medium heat.

When toasted, add the pork mince and garlic and fry until brown.

03.

Add the mirin and miso and mix well. 

04.

Cook the noodles as per packet instructions.

05.

Serve with the pork miso, hot chicken broth, pak choi and spring onions.
