Honey: 85g

Preheat the oven to 175ºC. Place the carrots whole in a baking dish. Add the olive oil and toss until fully coated. Drizzle the honey over the carrots and toss again to coat evenly. Season with salt and black pepper.

Roast in the oven for 30 minutes until tender and lightly caramelised. Serve warm from the oven. 

Tips & tricks

For your roast carrots with honey, select carrots that are all roughly similar in size. This will help to ensure the carrots cook evenly in the oven. Keep the oven at a medium-high heat, as this encourages caramelisation of the outside of the carrots for a glossy and inviting finish. 

Variations on honey-roasted carrots

It’s possible to vary the recipe above by substituting honey for alternatives such as brown sugar or maple syrup. Brown sugar brings richer caramel notes to the dish, and ensures it’s fully vegan if you’re catering for plant-based guests. 

For added crunch, you could introduce a few toasted almonds or hazelnuts sprinkled over the carrots to balance the sweetness of the dish. 

With parsnips or other roots

Honey-roasted carrots and parsnips are a classic flavour combination and work perfectly together in this recipe. Parsnips roast at a similar speed to carrots and can be added to the baking dish before being placed into the oven. 

Alternatively, you could try adding other roots, such as sweet potato cubes or beetroot, for a visually appealing colour contrast. 

Spiced, herby or citrus versions
