Parma ham: 60g

Cod fillets: 6, boneless and skinless

Thyme leaves: 1 tbsp

Garlic cloves: 2, chopped

Courgettes: 3, chopped

Onions: 3, peeled and sliced

Balsamic vinegar: 1 tbsp

Olive oil: 1 tbsp

Salt: to taste

Black pepper: to taste

When cod is in season during the winter months, it’s the perfect time of year to prepare cod loin wrapped in Parma ham for a special dinner with friends. Read on for our best recipe

Preheat the oven to 200ºC. Lay out the slices of Parma ham on a board. Place the cod fillets on top, split the thyme leaves evenly between the fish and wrap the ham around the cod.

Add the chopped garlic cloves, courgettes and onions to a roasting pan. Drizzle the vegetables with the balsamic vinegar and olive oil. Season with salt and black pepper.

Place the cod fillets over the vegetables and bake for 20 minutes, until the cod is golden. Plate individually with a serving of vegetables and enjoy warm from the oven.
