Who says peas can’t be part of a dessert? Here’s a sweet with strawberries, peas, mascarpone and chocolate
Peas are the sweetest of legumes, making them a great fit in this dessert by chef Lorenzo Manosperti, with tangy, enveloping and fresh notes.
How to prepare strawberries, peas, mascarpone and chocolate
First, prepare the mascarpone cream. Separate the yolks from the whites. Whisk the yolks with the sugar until pale and fluffy.
Add the mascarpone little by little, gently folding it in with a spatula or whisk by hand so the cream doesn’t deflate.

Separately, whip the egg whites with a pinch of salt until stiff. Gently fold them into the mascarpone cream, mixing from bottom to top.
Once ready, let the cream rest in the fridge for at least 30 minutes before serving.
Heat a knob of butter in a pan, add the peas and a very light sprinkle of sugar. Sauté for a few minutes, keeping them crunchy.
Slice the strawberries and season them with sugar and lemon juice. Place them at the base of the plate, add a quenelle of mascarpone cream, a spoonful of peas and some chocolate drops.
