Sparkling Conversations Around the Table is S.Pellegrino's new vodcast, filmed during the S.Pellegrino Young Chef Academy Competition 2024-25 Grand Finale. Hosted by Nick Grimshaw, BBC presenter and co-host of the podcast Dish, the four episodes bring together the seven members of the jury – Christophe Bacquié, Jeremy Chan, Antonia Klugmann, Niki Nakayama, Elena Reygadas, Julien Royer and Mitsuharu Tsumura – along with Nelson Freitas, winner of the previous edition. In each episode, two of the eight chefs answer questions on the seven deadly sins and get to something more unexpected: the doubts, discipline and quiet obsessions that define a life in the kitchen. 

This episode features Chan, chef and co-owner of Ikoyi in London, and Reygadas, founder of Rosetta in Mexico City. Chan confesses that, for him, perfection is not a skill; endurance is. Reygadas admits she has no single signature dish, only moments of enthusiasm, and her creations belong more to her guests than to her. What follows is a conversation about what it truly means to be a chef.
