Dine like a local: chef Dan McGeorge’s guide to Liverpool

The chef from Vetch gives us his guide to the best dining and drinking in his hometown

You may recognise chef Dan McGeorge from TV’s Great British Menu, when he was the overall winner back in 2021. Since then, he’s left a longstanding role as head chef at Rothay Manor in Cumbria and opened his own restaurant, Vetch, in his hometown of Liverpool, a 26-seat fine-dining venue with British, Nordic and Asian influences. The restaurant has been recognised by Michelin and the Good Food Guide, amongst others – “intriguing as well as sophisticated” is how the latter describes the food. 

Who better then to take us on a tour of the best dining and drinking spots in Liverpool? Along with the recommendations below, McGeorge also recommends Lunko by the Lane for caffeine fixes and snacks, and Gelato for artisan sweet treats.

Bar Glue

Tucked away in a quiet corner of the Albert Dock, Bar Glue is making waves in the UK bar scene and recently landed at no.2 on the UK Top 50 Cocktail Bars list. Beyond Liverpool, Glue has also popped up in cities around the world. Check out their cocktails with a twist, like A Fox in the Outback, made with mezcal, dragon fruit, basil, celery, lime, and coconut foam. 

Belzan

Belzan is a stylish yet pared-back casual bistro in an unassuming location on Smithdown Road, Wavertree. Expect humble dishes like their iconic Guinness rarebit with potato, and classic desserts like bread and butter pudding. Sunday lunches are all about roast chicken or roast sirloin of Aurox beef. 

Berry and Rye

Berry and Rye is a speakeasy-style bar where you have to knock on a door to get in. Easily missed but definitely worth it when you find it, it serves amazing cocktails in a prohibition era-style building with secret menus. 

Bold Street Coffee

Bold Street Coffee is a Liverpool institution with an amazing selection of speciality coffee. They have rotating blends on the menu as well as a selection of freshly made sandwiches, all-day breakfast and lunch dishes, and sweet treats, including doughnuts and sweet pastries. There are two sites: Bold Street itself and their new site at The Plaza. Their Honduran La Leona coffee brings to mind Daim bar, golden syrup and cacao nibs. [Various locations]

Manifest

A fantastic restaurant with a laid-back atmosphere and open kitchen, serving both an à la carte and a tasting menu. They do fresh, still warm potato crisps as a snack, lovely fresh oysters, pork chops from local butchers specialising in free-range products, and delicious desserts. Not to mention some pretty special and unique wines and cocktails. 

Nord

Nord is a superb restaurant with a relaxed and sophisticated vibe. Dishes such as beef tartare with macadamia, tallow and pickled cucumber [pictured] are awesome and they do an amazing Sunday lunch with all the trimmings. 

Pilgrim

An intimate restaurant inspired by the routes of the Camino de Santiago with open-fire cooking, just a short journey from the city centre on Allerton Road. I recommend the ribeye of beef cooked over embers served with mojo verde, or the hake with lentils and salsa verde [pictured].

Sister Ray

A very special bar with an array of amazing, unique cocktails such as a butter corn sour and a coastal martini utilising coastal herbs, and so many more.

Slowpour

Just three months after opening, this bar quietly earned a spot on the UK Top 50 Cocktail Bars list for 2026. Sitting on Bold Street, it’s become a go-to for great cocktails without the fuss. This is the kind of place you come to slow down, settle in and actually enjoy the moment. Everything here is done with intention, from the drinks to the service to the overall feel of the space. Founders Carey Hanlon and Caitlin Waugh [pictured right to left] have created an experience that feels thoughtful, welcoming and personal for everyone who walks through the door.
